Hot Fudge Peanut Butter Pudding

This wonderfully rich decadent dessert is cooked in a slow cooker. Combining chocolate and peanut butter is a fantastic match and you can’t go wrong. Topped with a sweet chocolate sauce and allowed to slow cook for 2 ½ hours to produce a sweet rich dessert. Paired with vanilla ice-cream and you will be fighting for seconds!

Ingredients:
Pudding
• 1 cup Plain Flour
• 2 tbsp cocoa powder
• 1 1/2 tsp Baking Powder
• 1/4 tsp Salt
• 1/2 cup White Sugar
• 2 tbsp Vegetable Oil
• 1/2 cup Milk
• 1 tbsp Vanilla Extract or vanilla essence
• 1/2 cup Peanut Butter smooth or chunky to your preference
• 1/2 cup Chocolate Bits
Topping
• 3 tbsp cocoa powder
• 3/4 cup White Sugar
• 1 1/2 cups Boiling Water

Instructions:
Pudding
1. Spray your slow cooker with non stick cooking spray.
2. In a separate bowl add flour, cocoa powder, baking powder, salt and sugar. Mix to combine.
3. Make a well in the centre and add vegetable oil, milk and vanilla extract. With a wooden spoon, stir until well combined and a smooth mixture is produced.
4. Add peanut butter and stir through. Note: this will be a thick batter and difficult to stir.
5. Add chocolate bits and mix through.
6. Spread mixture evenly in the slow cooker.
Chocolate Topping
1. In a medium bowl add cocoa and sugar and stir to combine.
2. Add boiling water and stir until completely combined.
3. Pour topping over the batter in the slow cooker, but do not stir through.
4. Cover the slow cooker, set to high and cooker for 2 1/2 hours.
5. Once done, turn off slow cooker and let stand, while still covered in the slow cooker, for 30 minutes before serving.
6. Serve with ice-cream when ready.
