Sweet Potato Pizza Crust

Ingredients: 1/4 cup mashed sweet potatoes 1/4 cup ground flax seeds 3 egg whites

Directions: 1. Heat the oven to 375 degrees F. 2. Wash and poke some holes in the sweet potato. Microwave it for about 5 minutes, and then peel it, mash it, and measure out 1/4 cup. 3. Combine sweet potato, flax seed, and egg whites with a fork as best as you can. It will not mix completely, and that is okay. 4. Spread the mixture very thinly over parchment paper. You MUST use parchment paper, or you will never get the pizza crust back up. I like to use the back of a spoon to do this. It should look something like this: 5. Bake at 375 degrees for about 25-30 minutes until the edges and the thin parts are browned. You want it to be cooked until it is crispy or the pizza will be soggy after you top it. 6. Remove the crust from oven and dress it with desired toppings. For this particular pizza I used hummus instead of tomato sauce as my base, and then added spinach, eggplant, artichokes, peppers, onions, spices, homemade buffalo chicken, and lean chicken sausage. You can top it with cheese if you’d like, but I usually just add nutritional yeast flakes after cooking since I don’t tolerate dairy well. Once your pizza is dressed, place it back in the oven for 15 minutes at 425 degrees. 7. Now your pizza is ready, so pull it out of the oven and enjoy! This recipe will serve one or two people, depending on your appetite.
