Rice Pudding – From Leftover Rice

Cooking time – 40 mins, Prep time – 20 mins, Serves – 6

Ingredients

2 cups – Left over cooked rice

1/4 glass – milk

1/2 glass – Condensed milk

1 full – Egg

1 – Egg yolk

2 tbsp – sugar

1/2 tbsp – Cinnamon powder

1/2 tbsp – Nutmeg powder

4 tbsp – Chopped nuts

4 tbsp – Chopped raisins

1/2 cup – Cake crumbs or Bread crumbs

a pinch – Salt

Method

  • In a blender, put rice, milk and condensed milk. Blend it to a smooth paste. Keep it aside in a bowl.

  • Whisk egg, egg yolk, sugar, cinnamon & nutmeg powder in a blender.

  • Mix both the mixture together in a bowl and add chopped nuts & raisins. On top of it add cake crumbs and salt.

  • Take a greased baking dish, spread the mixture evenly and bake it at 180'C for 30 – minutes.
