Hearty Beef and Winter Vegetable Soup


The recipe :

2lbs of boneless beef – cut into 2 cm cubes 1 whole onion diced 2 sweet potatoes – cut into cubes 2 carrots 2 parsnips – cut into cubes 2 cups riced cauliflower 2 cloves of minced garlic 6 cups beef stock 1/2 tsp thyme 1/2 tsp peppercorn

The instructions are very easy to follow:

1.Peel, cut, dice , chop your vegetables and beef as per ingredient list

  1. Turn stove to medium and brown your beef. Once browned set it aside.

  2. Add your onion and garlic to the pot for 2-3 minutes, once you can start to smell the aroma, add 3 cups (or half) of your beef stock.

  3. Add your veggies and cauliflower rice into the pot, put the lid on, and wait 10-15 minutes until the veggies have softened.

  4. Add the thyme and peppercorn, the browned beef, and the rest of the beef stock. Cook on high for 40-45 minutes

  5. Serve!
