What are fried chicken recipes like if you use a unconventional flour?

I noticed that people make beer out of many different grains, and they've experimented with wheat, barley (most common), and even rice beers. When it comes to frying fish or chicken, it seems that there has been much less experimentation. There are so many types of flour, but people seem to cook fried chicken in all-purpose flour. What would it taste like to fry the fish or chicken using different kinds of flour like the ones I've listed?
