Chicken Tortellini With Spinach & Sun-Dried Tomatoes

When looking for a simple, easy to make weeknight meal that will also provide a very satisfying blend of flavours, then look no further – this is the recipe for you. The chicken and tortellini are a perfect match. Add into this a creamy spinach and sun-dried tomato sauce and you have a fantastic pasta dish. Finish off by stirring through parmesan cheese and you have a wonderful combination of flavours. This dish will become a family favourite.

• 2 tbsp Vegetable Oil
• 375 g Tortellini
• 2 Chicken Fillets Breast fillets, cut into bite size pieces
• 4 cloves Garlic crushed
• 3 cups Baby Spinach
• 3/4 cup Sun-Dried Tomatoes use jarred tomatoes packed in oil
• 1 cup Thickened Cream
• 1/2 cup Parmesan cheese
• 1/2 tsp Salt
• 1/2 tsp Pepper

1. Cook tortellini according to packet instructions.
2. Heat oil in a frying pan over medium heat.
3. Add chicken and cook until browned and cooked through (about 10-15 minutes). Transfer to a plate and set aside. Keep warm by covering with foil.
4. Add spinach, garlic and sun-dried tomatoes to the frying pan and cook for about 2 minutes or until spinach is wilting. Stir constantly.
5. Add thickened cream and cook, while stirring regularly, for about 1 minutes until liquid is reduced a little and becomes creamy.
6. Add chicken, tortellini & parmesan to the pan, stir to coat with the cream sauce and cook for about 1 minute until heated through. and cheese melts.
7. Top with black pepper and serve.
