Asian Beef Salad

INGREDIENTS

For Salad Dressing

  • Lime Juice – 2 TBSP
  • Brown Sugar – 1 1/2 TBSP
  • Fish Sauce – 1 1/2 TBSP
  • Small Red Chilies (with seeds) – 1

For Marinade

  • Juice of a lime – 1/2
  • Dark Soya Sauce – 1 TBSP
  • Brown sugar – 1 TBSP
  • Oyster sauce – 1 TBSP
  • Canola Oil – 1 TBSP
  • Garlic – 1 clove
  • Skirt steak or Flank steak – 500-700g

For Salad

  • Cucumbers – 4 small
  • Carrots – 3 small
  • Red onion – 1/2
  • Mint leaves – 10
  • Cilantro – 1/2 cup
  • Roasted peanuts – 1/4 cup chopped

INSTRUCTIONS

Marinate the beef ~2h. Bring to room temp before cooking. Thinly cut all salad ingredients, put it in ice water until ready to use. Add chilli if you like it spicy. Cook the beef to your liking (I like medium rare, ~6 minutes). Let rest for 5-10 mins THEN slice. Mix ingredients for salad dressing and put all the vegies + beef in a large bowl. Add roasted peanuts to finish. Enjoy!
