Carrot Chowder


-2 1/2 cups grated carrots
-1lb. ground beef
-1/2 cup chopped celery
-1/2 cup chopped onion
-1/2 cup diced green pepper
-4 cups tomato juice
-8 to 10 slices Swiss cheese
-1 1/2 cups water
-2 cans cream of celery soup
-1 tsp. sugar
-1/2 tsp. garlic salt
-1/8 tsp ground marjoram
– salt & pepper


In large soup pot brown beef & drain off fat. Add salt, celery, onion, green peppers. Cover & simmer over low heat about 10 min (tender veggies). Add all remaining ingredients except cheese to beef mixture. Heat to boiling; reduce heat & simmer for 30 min, stirring occasionally. Serve by placing a slice of cheese in each bowl, then ladle in chowder.
